  • 3 large eggs

Ingredients for Churro Crust:

  • 1/2 cup graham cracker crumbs or a mix of graham cracker and cinnamon cookie crumbs
  • 1/2 cup melted butter
  • 1/4 cup granulated sugar
  • 1 tbsp ground cinnamon

Instructions
 

Make the Churro Crust:

  • Combine graham cracker crumbs, melted butter, sugar, and cinnamon in a bowl.
  • Mix until it reaches a wet sand-like texture, then press the mixture into the bottom of a springform pan or pie dish.
  • Bake at 350°F (175°C) for 10 minutes, until golden and aromatic. Let cool before adding the cheesecake filling.

Prepare the Cheesecake Filling:

  • Beat softened cream cheese and sugar until smooth.
  • Add eggs one at a time, mixing well after each addition.
  • Stir in vanilla extract and sour cream (optional).
  • Pour the cheesecake filling over the cooled churro crust, spreading evenly with a spatula.

Bake the Cheesecake:

  • Bake at 325°F (163°C) for 50–60 minutes, or until the cheesecake is set with a slight jiggle in the center.
  • Allow the cheesecake to cool gradually in the oven with the door slightly ajar for an hour to avoid cracking.
  • Refrigerate for at least 4 hours (or overnight) to fully set.

Add the Cinnamon-Sugar Topping:

  • After cooling, evenly sprinkle a cinnamon-sugar mixture over the top for that signature churro finish. Optionally, toast the cinnamon-sugar in a skillet for a deeper flavor.
